If you’re like me and often cooking for a table of one, especially after a long day at the coalface, you just want something quick and tasty. That doesn’t make a lot of washing up. And you can eat out of a bowl in front of the TV…
Here’s a little sumpthin that I whip up from time to time that fits that brief. Serves 1.
What you need
Fusilli (or whatever pasta you like) – a generous handful
Rocket (or English Spinach or shredded kale), as much as you like
Cherry tomatoes – a handful – sliced in half
Smoked salmon – about 50g – sliced into whatever size you prefer
Marinated goat feta – *see note below
Garlic – 1 small clove – squish with some good salt to bring out the oil
Lemon infused extra virgin olive oil (or plain oil with a squeeze of lemon juice and perhaps a little fine zest)
What to do
Cook the pasta
Wash and dry the rocket (how good are salad spinners??)
When the pasta is cooked, drain it then stir in the rocket – put the lid on the pot for a few minutes to help to wilt the rocket
Stir in everything else.
Yum!
*I use Meredith Dairy Marinated goat cheese because it’s the most delicious stuff I’ve ever had, but you can use any type of fresh cheese

Hello love! Thanks for dropping by 🙂 I almost always use ‘Buon Appetito’ spirals from Woolies. They come in a clear plastic packet with bands of dark green. They’re made from rice and corn and have a much better flavour and texture than lots of other GF pastas that I’ve tried. They live in the Gf/health food section. Also the San Remo brand is good, but more expensive, and curiously, in the normal pasta section. Ciao!
